About Eimear Diamond

Eimear Diamond is the founder of Diamond Beef Boxes, a new direct-to-customer beef enterprise based on her family farm in County Antrim. A newcomer to selling meat, Eimear has quickly made a name for herself by sharing the real story behind the farm, offering full traceability, transparency, and trust in every box of beef.

Eimear is a recent graduate of the Next-Gen Regen programme in Northern Ireland, run by the Food, Farming & Countryside Commission (FFCC), where she developed her vision for a more resilient farming future.

At Fields Good, she’ll co-present “Trust on the Table: Lowdown on Selling Meat”, sharing honest insights into what it’s like to start from scratch, build customer relationships, and create a brand rooted in integrity.
